It's Squid's cake day! Happy Cake Day, Squid!
(This is my favorite chocolate cake recipe. It's really easy, totally delicious and as a bonus, is vegan friendly.)
1 1/2 cups flour
1 cup sugar
2 Tbsp cocoa (I use Hershey's Special Dark cocoa.)
1 tsp baking soda
1/3 tsp salt
1 Tbsp vinegar
1 tsp vanilla
1/3 cup vegetable oil
1 cup strong coffee
Mix (feel free to do this right in your 8x8 square pan, or mix in a bowl and pour into pans/muffin tins) everything together. Mixing the dry ingredients before adding the wet ones helps.
Bake at 350. 35 mins for cake pans; 18-20 minutes for cupcakes.
